ADD Buffet

All-day-dining buffet — the workhorse F&B outlet of an Indian hotel.

Definition

ADD (All Day Dining) is the buffet-led restaurant that serves breakfast, lunch, and dinner to in-house guests and walk-ins. Buffet par-level (food prepped) vs cover count is the core efficiency lever; 15–20% buffet wastage is industry-typical and entirely fixable with forecast-driven par levels.
